Shrimp Fajitas with Serrano Cream Sauce
1 lb shrimp, peeled & deveined 2 Tbsp HEB Smoked Paprika Chorizo Rub 1/2 white onion, thinly sliced into half moons 1/2 red bell pepper, sliced 1/2 poblano, sliced 5 Tbsp olive oil 2 limes tortillas
*Marinate shrimp in 3 Tbsp olive oil and chorizo rub for at least 15 minutes. *Heat skillet over med high heat, when hot add oil. When oil has heated add in veggies and sauté for about 3-4 minutes. Add in shrimp and cook until they turn pink, about 5 minutes. *Place shrimp and veggies on tortilla, top with cream sauce, and lime juice.
Sauce: 5-6 Serrano peppers, ribs and seeds removed 1 bunch cilantro 1 1/2 Tbsp olive oil Mexican Crema pinch salt
*In blender or food processor add in poblano and some of the oil. Puree until almost smooth. Add in cilantro and salt. Puree until smooth. Add in creama and puree until well incorporated. Keep chilled until ready for use.
