Monday’s Meal: Chipotle and Apple Turkey Burger

Chipotle and apple turkey burger


1 ea. egg yolk
2 tsp. fresh squeezed lemon juice
1 tsp. kosher salt
½ tsp. black pepper
1 cup canola oil
1tbsp. Dijon mustard
2tbsp. sliced chives
2tbsp. chiffonade basil

Turkey burger:

1 tbsp. canola oil
¼ cup diced celery
2 tbsp. sliced green onions
4 ea. minced garlic cloves
1 ea. Granny Smith apple
1 pound ground turkey
2 tsp. minced chipotle chili
1 tsp. kosher salt
½ tsp. black pepper
2 tbsp. chopped thyme leaves

For serving:

Provolone cheese
Hamburger buns
Butter lettuce
Sliced red onions


To make aioli, in a bowl whisk together egg yolk, lemon juice, salt and pepper and mustard.  Slowly add the oil, whisking constantly.  Once you have a mayonnaise-like consistency whisk in the chives and basil.

To make burgers, heat the oil in a sauté pan.  Add the celery, green onions and garlic and sauté until golden brown.  Drain on a plate with a paper towel.  Clean the apple, and grate on the larger holes of cheese grater.  Combine the grated apple, ground turkey, chipotle, salt, pepper, thyme and cooked vegetables and mix well.  Portion into patties.  Pre-heat grill and cook patties to an internal temp of 175 degrees F.  Melt provolone cheese on top and serve with lettuce, tomato, onion on a toasted bun.
