To make aioli, in a bowl whisk together egg yolk, lemon juice, salt and pepper and mustard.Slowly add the oil, whisking constantly.Once you have a mayonnaise-like consistency whisk in the chives and basil.
To make burgers, heat the oil in a sauté pan.Add the celery, green onions and garlic and sauté until golden brown.Drain on a plate with a paper towel.Clean the apple, and grate on the larger holes of cheese grater.Combine the grated apple, ground turkey, chipotle, salt, pepper, thyme and cooked vegetables and mix well.Portion into patties.Pre-heat grill and cook patties to an internal temp of 175 degrees F.Melt provolone cheese on top and serve with lettuce, tomato, onion on a toasted bun.
