Good Day Cafe - Cavatelli di Grano Arso

NEW YORK (MYFOXNY) - "CAVATELLI  DI GRANO ARSO" - BURNT WHEAT CAVATELLI

Cavatelli Dough Ingredients

1 ¾ cup toasted flour

1 ¾ cup Durum flour

1 ½ Tablespoon black ink

1 Tablespoon salt

1 1/3 cup hot water

½ cup red wine reduction

2 eggs

Pinch of Nutmeg

Pinch of white pepper

Sauce

1 Tablespoon Olive Oil

3 garlic slices

½ cup veal stock

½ cup white wine

½ cup chopped Italian Sausage (cut into 1" chunks)

½ cup Chanterelle Mushrooms (Soaked & cleaned)

Salt

Pepper

Directions

1. Begin by spreading 1 1/3 cup Durum flour on a baking sheet and placing it in the oven for 25-30 minutes at 400 degrees. Until color is golden brown.

2. Combine untoasted flour with toasted flour in a food processor and mix together. Add nutmeg, white pepper, salt and pepper.

3. Beat eggs in a bowl, add black ink and continue to whisk together.

4. Add egg mixture to flour, and slowly add in red wine reduction and hot water.

5. Once dough is thoroughly mixed together cut 1" slices and roll out between both hands. Pat down to then feed through a cavatelli machine.

6. Take formed Cavatelli and place on a plate, sprinkle semolina flour over finished pasta.

7. Heat olive oil in a pan and sauté garlic until browned.

8. Add chanterelle mushrooms and sausage. Cook 3-4 minutes.

9. Add veal stock, and white wine. Reduce for 1-2 minutes.

10. Season with salt, pepper and add freshly chopped parsley.

11. Boil pasta in water until they begin to float 1-2 minutes.

12. Add pasta to the sauce and mix together. Add chopped parsley and Parmesan cheese. Enjoy!
