Monday's Meal: Kale, Walnut & Flax Slaw

In honor of heart healthy month, Chef Justin Raiford from Walton's Fancy & Staple prepared tasty slaw using fresh, local ingredients.

Recipe: Kale, Walnut & Flax Slaw


  • 1/2 an orange juiced and zested
  • 1/2 a lemon, juiced
  • 1 Tablespoon red wine vinegar
  • Salt and freshly ground black pepper
  • 1 tablespoon E.V.O.O.
  • 1 rounded tablespoon mayonnaise
  • 1 head kale, stems removed torn or sliced into small pieces
  • 1 large carrot, julienned
  • 1/2 red onion, shaved
  • 1/2 cup of toasted walnuts
  • 1/4 flax seeds
  • 1 slice bacon, cooked crisp and chopped


  1. In a large bowl add your orange juice and zest, lemon juice, red wine vinegar, salt, pepper, EVOO and mayo.
  2. Once well mixed, add your kale and carrots, toss thoroughly, set aside at room temp for a few minutes.
  3. Thinly slice your red onion on a mandolin, and put the shaved onion in a small bowl with acidulated ice water (ice water with a squeeze of lemon or a teaspoon of vinegar) and let sit for 5 minutes.
  4. Drain the water and blot the onions with a paper towel.
  5. Add the onion, bacon, walnuts, and flax seeds and toss well.
  6. Refrigerate until ready to serve.

 Can be made several hours in advance.
