Tuesday's Meal: Southwestern Seared Salmon

Steve Constantine, with HEB's Lakeway Cooking Connection, stopped by the Good Day kitchen to show us how to prepare a heart-healthy meal for Valentine's Day.

Recipe: Southwestern Seared Salmon with Strawberry Spinach Salad


  • 1 fillet of Wild Sockeye Salmon, Per person
  • 1 Tbsp Adams Reserve Southwest Ancho Seasoning
  • 1 small Avocado, cut in slices
  • Rustico Unfiltered Extra Virgin Olive Oil


  1. Rinse salmon and remove any pin bones or scales, pat dry.
  2. Then lightly oil salmon, then season  liberally with Adams seasoning.
  3. Pan sear in Olive oil on medium/high heat for aprox 3-4 minutes per side (depending on thickness).
  4. Once salmon is cooked to your liking, garnish with Avocado slices, and then drizzle with Rustico Unfiltered Extra Virgin Olive Oil!  Enjoy!

Recipe: Strawberry Spinach Salad


  • 1 Package of Central Market Organic Spinach
  • 2/3 package of strawberries, cut in ¼
  • ¼ red onion, very thinly sliced
  • 2/3 container goat cheese crumbles
  • Honey Toasted Pecans, crushed
  • 1 bottle of Cookwell and Co. Watermelon Vinaigrette


In a medium bowl, layer all ingredients, (Spinach first, then work your way down the list, last Drizzle with Watermelon Vinaigrette).
