We all know the city of Austin offers a lot of unique things. But how about making your own wine without having to crush the grapes, or even having to visit a vineyard?
Water 2 Wine offers wine-lovers just that. They even call it the "Build-a-bear for adults". They aim to make your perfect blend and are a winery, not a vineyard, Jennifer Westhoff, a manager at Water 2 Wine, tells us they get grapes from more than 100 vineyards in 13 different countries. The wine however, is made at their locations. "You try what we've got and then we bring you in to the mixing room here where you get to mix everything together. Then we take over for the next 45 days to 2 months and do all the fermentation for you," says Westhoff.
Here's how you make wine. Reverse osmosis water is placed into a fermenter. The must, which is concentrated grape juice, is added. A different sort of must, which is made up of seeds, stems and pulp of the grapes is also added. And since no wood barrels are used, they add different types of oak to the mix. "In about a week's item we can get the same amount of oak than a barrel does in about a year," says Westhoff.
It's then topped off with yeast, which eats at all the sugars creating alcohol. Over the next 45 days it is fermented in different stages and filtered. Customers are then able to come back, bottle it, and even create their own custom labels on their 28-30 bottles
They make small 6 gallon batches to get a consistent product every time. Water 2 Wine also tells us most wine contains a lot of sulfites to keep it fresh. Theirs comes with a very low percentage, and their products do not contain histamines. "What's really the big difference is the histamines. Histamines are typically what give you headaches, congestion, flushed blush reactions, and we are histamine free," says Westhoff.
The price for making your own batch of wine range from $249 to about $500, depending on the wine.
