Blackened Tilapia with Quinoa

Chef Emily Madden, from HEB, joined us in the Good Day kitchen to prepare for us a recipe that is full of protein and fiber.

Recipe: Blackened Tilapia with Quinoa


  • 4 tilapia fillets
  • 2 Tbsp Blackened seasoning
  • 1 Tbsp olive oil
  • 2 cups cooked quinoa
  • 1 cup baby spinach
  • 10 grape tomatoes, halved
  • 1 lime


  1. Cook Quinoa according to package directions. Add in spinach and grape tomatoes and keep covered until fish is done. 
  2. Rub fish with blackened seasoning.
  3. Heat oil in skillet over med-high heat. Cook tilapia for about 4 minutes per side. 
  4. Serve fish on a bed of quinoa and garnish with a wedge of lime.
