Monday's Meal: Spaghetti & turkey meatballs

Kristin Andrews, with the Central Market School, joined us in the studio this morning to show us a healthy recipe to kick off the New Year.

Recipe: Garden spaghetti sauce


  • 2- 28oz cans whole peeled tomatoes
  • 1 large onion diced (about 2 cups)
  • 4 medium carrots peeled and diced (about 2 cups)
  • 4 ribs of celery, diced (about 2 cups)
  • 3 large cloves garlic, minced
  • 2 tbsp olive oil
  • 1 bay leaf
  • 1 can of white beans, cannellini or great northern work fine, drained and rinsed well
  • ½ cup fresh basil and parsley, chopped


  1. Saute vegetables in olive oil over medium high heat for 4-5 minutes. Season with a good pinch of salt and pepper.
  2. Crush whole tomatoes into the pot by hand, adding all of the tomatoes juices and bay leaf.
  3. Simmer uncovered over medium-low heat for 45 min to 1 hour.
  4. Remove bay leaf, add can of beans and puree sauce either in a blender in batches or with a hand held emersion blender until it's a nice smooth consistency.
  5. Add herbs and taste for salt and pepper.

** Veggies and tomatoes can be combined in a crock pot on low for 6-8 hours as well.

Recipe: Turkey Meatballs


  • 1 pound ground turkey breast
  • ½ medium onion, finely minced (about 1 cup)
  • 2-3 cloves garlic, minced
  • 2 egg whites
  • ¼ cup whole grain bread crumbs
  • ¼ ground flax meal
  • ½ bunch fresh parsley, finely chopped (about ¼ cup)
  • 2 Tbsp grated parmesan cheese
  • 1 tsp salt
  • 1 tsp fresh ground pepper


  1. Preheat oven to  400°F.
  2. Combine all ingredients in a large bowl and mix by hand until thoroughly incorporated.
  3. Roll into 16 golf ball sized balls and place on a foil lined sheet pan.
  4. Bake for 15 minutes or until internal temperature reaches 165°F.
  5. Place meatballs in prepared sauce and simmer for 3-4 minutes.
  6. Serving size is 3-4 meatballs per person.
