Monday's Meal: Grouper en Caldo

Executive Chef Blake Keely of Benji's Cantina joined Good Day Austin to share his recipe for Grouper En Caldo.

Grouper en Caldo Recipe:

4- 6 oz pieces of grouper fillet

8-oz rock shrimp

3 Tablespoons plus 1 tablespoon olive oil

2 Tablespoons garlic (sliced thin)

3 Tablepoons scallion sliced thin (keep green and white separate)

½ cup tomato-diced

1 cup fish stock

½ cup white wine

½ cup ancho chile reconstituded and diced small)

1 cup tomato-diced

2 tablespoons fresh lime juice

¼ cup cilantro chopped

1 spring fresh oregano-chopped

1 bay leaf

4oz ( half stick ) butter-diced

4-large cilantro sprigs.

Salt and pepper
