Thanksgiving Holiday Recipes

MASHED SWEET POTATOES AND CARROTS

Ingredients:

  • 8 oz. carrots, peeled and cut into 1-inch pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 3 Tbsp. butter, divided
  • 2 Tbsp. honey
  • 1 Tbsp. brown sugar
  • 1/4 cup milk
  • 1/2 tsp. kosher salt

Preparation:

  1. Place carrots and sweet potatoes in a saucepan. Cover completely with water, and bring to a boil. Let simmer, uncovered, for 10-15 minutes, until carrots and sweet potatoes are tender when pierced with a fork.
  2. Drain, and return vegetables to the pot. Add 2 tablespoons of the butter and the remaining ingredients. Mash well.
  3. Serve warm, topped with remaining tablespoon of butter

 

Oven Roasted Green Beans


 

 

 

Ingredients:

  • 1 lb. fresh broccoli
  • 3 cloves garlic, sliced
  • 3-4 Tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 2-4 Tbsp. grated Parmigiano-Reggiano cheese

Preparation:

  1. Preheat oven to 425 degrees F.
  2. Trim broccoli, and cut into florets that are roughly the same size. (Cutting the broccoli this way ensures even cooking.)
  3. Transfer the broccoli to a heavy baking sheet (I like to use my cast iron pizza pan (compare prices)). Sprinkle on the garlic and salt, and drizzle on the olive oil.
  4. Toss with your hands, trying to make sure each piece of broccoli is coated well with the oil. Spread broccoli out in an even layer.
  5. Roast for 15 minutes. Stir, then roast another 5-15 minutes until the broccoli is browned and crispy on the edges, but tender when pierced with a fork.
  6. Sprinkle on the grated cheese, and serve immediately.

Oven Roasted Green Beans

Ingredients:

  • 1-1/2 pounds fresh green beans, washed and trimmed
  • 1-2 Tbsp. olive oil
  • 1/2 tsp. sea salt, such as Maldon

Preparation:

  1. Place a rack in the middle of the oven. Preheat oven to 450 degrees F.
  2. Using your hands, toss fresh green beans with olive oil to make sure they are evenly coated. Spread out in an even layer on a heavy baking sheet or an enameled cast iron pan, such as the Mario Batali pizza pan (compare prices) (yes - this pizza pan works great for roasting).
  3. Place on middle rack of oven and roast 10 minutes. Remove from oven and stir. Roast another 10 minutes or until golden brown. Watch carefully to make sure green beans don't burn. They should be well-browned, but not burned.
  4. Immediately sprinkle with sea salt and serve.

Mashed Cauliflower Recipe

Ingredients:

  • 1 large head cauliflower (or 10 oz. cauliflower florets)
  • 2 pounds Yukon Gold potatoes, peeled and diced into 1-inch pieces
  • 3 cloves garlic, minced (or 2 Tbsp. minced garlic)
  • 1 Tbsp. butter
  • 1/4 cup whole milk
  • 1/4 cup shredded cheddar cheese

Preparation:

  1. Place cauliflower florets and diced potatoes in a large, heavy saucepan. Cover with water by two inches (the water should come up to two inches over the tops of the vegetables in the pot).
  2. Bring to a boil and cook 10 to 15 minutes until vegetables are tender when pierced with a fork.
  3. Drain in a colander.
  4. Return vegetables to the saucepan. Add remaining ingredients. Mash with a potato masher until the mixture reaches the desired consistency.

Thanksgiving brine

(FOR TURKEY)

Ingredients:

For each gallon of cold water used in the brine, add the following:

  • 3/4 cup coarse kosher salt
  • 3/4 cup granulated sugar
  • 1 cup boiling water
  • 1 gallon cold water
  • 1 tablespoon black pepper

Optional ingredients for flavor:

  • Apple juice or cider
  • Bay leaves
  • Favorite dried herbs and spices (sage, oregano, thyme, basil, cloves, cinnamon, etc.)
  • Cracked black peppercorns
  • Lemon or orange slices
  • Crushed garlic cloves
  • Beer
  • Sugar (granulated, brown sugar, or maple syrup)

When purchasing a turkey for brining, choose a natural turkey (not a self-basted bird that's been injected with a solution of salt and other flavorings).
