Extended Stay America's double-duty holiday delights

Extended Stay America hotels and Food Network's Sunny Anderson introduce the "Away From Home Cooking" in-room cookbook, available in each of Extended Stay's 76,000 guestroom kitchens so travelers can skip fast food and empty calories when on the road. Take a look at a few recipe examples below that will serve double-duty this holiday season:

Sunny's Memphis Blues & Blackberry Compote

Bring the rhythm of the South to your family feast with this fresh and fruity compote that adds made-from-scratch taste to any meal.

Ingredients
- 1 Apple: Peeled, Cored and Chopped
- 1 Pint Blueberries
- 1 Pint Blackberries
- ¾ Cup Sugar
- 2 Teaspoons Fresh Lemon Juice
- ½ Cup Water

Steps
- Combine all ingredients in large saucepan.
Apple, Blueberries, Blackberries, Sugar, Lemon Juice, Water
- Cook, uncovered, over media heat while gently mashing until fruit is tender and liquid reduces slightly to syrup. About 20 minutes.
• Top holiday ham and turkey for a sweet and savory alternative to can-of-cran jelly or spoon over ice cream for a fresh ending to a delicious meal that won't leave guests feeling sluggish.
• Tip: Compote also works great chilled in yogurt or use the syrup as a great flavoring for tea.

Sautéed Apples Supreme

10-minute glazed apples are a sweet side to savory main-course meals, then pour into ready-made pie crusts for a homemade apple pie in half the time.

Ingredients
- 1 Large Apple: Quartered, Cored and Cut into ½ inch thick slices
- 1 Teaspoon Butter
- ¼ Cup Unsweetened Apple Juice or Cider
- 2 Teaspoons Brown Sugar
- ½ Teaspoon Ground Cinnamon
- Chopped Walnuts

Steps
- Melt butter in large skillet over medium heat.
- Add apple slices and cook 4 minutes, stirring occasionally
- In a bowl, combine apple juice, brown sugar and cinnamon.
- Pour over apples and simmer 5 minutes or until apples are tender and sauce thickens.

Just pop the filled pie crust in the oven for 20 minutes for easy apple pie for incredible homemade taste without the time it takes to bake.

Sunny's Easy Strawberry Banana Hot Chocolate

Creamy cocoa steeped with strawberries and bananas for a fresh twist on a classic.

Ingredients
- 6 Strawberries, Hulled and Chopped
- 1 Banana, Sliced
- 4 Packets of Hot Chocolate
- Water equal to required amount for 4 Packets of Hot Chocolate

Steps
- Combine strawberries, banana, water in large saucepan.
- Cover, cook over low heat until fruit is very soft. About 15 minutes.
- Remove fruit with slotted spoon or strain through colander and return liquid to saucepan.
- Add chocolate packets; stir until dissolved. Serve hot for a holiday morning treat.
- Strained fruit is a nutritious addition to oatmeal and cereal.
