Cheesy Beer Soup

Mari Soto, from Whole Foods, stopped by the Good Day kitchen to show us how to make cheesy beer soup.

Recipe: Cheesy Beer Soup


  • 1 Tbsp margarine
  • ½ cup chopped onion
  • ½ tsp minced garlic
  • 1 tsp Worcestershire sauce
  • 12oz can or bottle light beer
  • 14 ½ oz can vegetable stock
  • 3 Tbsp cornstarch
  • 2 cups half-and-half
  • 2 cups shredded sharp cheddar cheese


  1. Melt the butter or margarine in a soup pot over medium heat.
  2. Add the onion, garlic and Worcestershire sauce and stir well.
  3. Add the beer and raise the heat to high and boil for 3 minutes to evaporate the alcohol.
  4. Add the vegetable stock and bring the soup back to a boil.
  5. Lower the heat to medium-low and simmer.
  6. Combine the cornstarch with 3 Tbsp water and stir until smooth and set aside.
  7. Add the half-and-half and shredded cheese to the soup.
  8. Stir constantly until the cheese melts.
  9. Stir in the cornstarch mixture.

Stir constantly until the soup is thick, about 2 minutes.
