Chef Paul's tailgating apps featuring Michigan apples

September is here and that means it's the start of tailgating season. But before you reach for the hot dogs and chips, HAP's Chef Paul Penney has a few tasty and healthy alternatives courtesy of Michigan apples.

Creamy blue cheese and honey apple topped crostini
The tangy Blue cheese and tart apples are mellowed by the creamy ricotta cheese to provide a colorful and tasty appetizer.

12 Servings (3 crostini each)

Ingredients:
1 pound Part skim ricotta cheese
5 ounces Crumbled Blue cheese
2 tablespoons Chopped fresh basil
1 tablespoon Honey
1/4 teaspoon Ground black pepper
4 teaspoons
Olive oil
36 Thin slices baguette
36 Unpeeled cored thinly sliced McIntosh OR Northern Spy apples
36 Small fresh basil leaves

Preparation:
1. Combine all ingredients except olive oil, bread and apple slices. Refrigerate at least 2 hours.
2. Preheat convection oven to 375°F. Brush one side of each baguette slice lightly with oil. Place on a full sheet pan. Bake 4 to 5 minutes or until toasted. Cool.
3. For each serving, top 3 crostini with 1 tablespoon apple mixture, 1 apple slice and 1 fresh basil leaf each. Plate and serve.

Spicy apple glazed meatball skewers
Prepared frozen meatballs make this appetizer easy and quick to prepare. The fresh ingredients lend flavor, color and texture.

6 Servings (3 skewers)

Ingredients:
1/4 cup Firmly packed brown sugar
2 teaspoons Cornstarch
1 teaspoon Ground ginger
1/8 teaspoon Cayenne pepper
1 cup Apple juice
1/4 cup Reduced sodium soy sauce
1 teaspoon Chili garlic sauce
18 Prepared meatballs, thawed if frozen
18 1-inch green pepper squares
18 Fresh unpeeled McIntosh OR Northern Spy apple wedges
18 1-inch pieces green onionGreen onion tops (optional)

Preparation:
1. Combine brown sugar, cornstarch and spices in saucepan. Stir in apple juice, soy sauce and chili garlic sauce until smooth. Bring to a boil on medium heat, stirring frequently. Simmer 2 minutes until thick and clear, stirring occasionally.
2. Add meatballs and glaze on low heat 2 minutes or until meatballs are heated through, stirring occasionally.
3. Make skewers of 1 green pepper square, 1 meatball, 1 apple wedge and 1 piece green onion.
4. Drizzle about 1 tablespoon remaining glaze onto each serving plate. Arrange 3 skewers on plate. Garnish with green onion top cut into thin strips.
