Downtown restaurant grows fresh herbs and microgreens in kitchen

It's a first for Arizona. A downtown Phoenix hotel is going green by installing a new way to grow fresh greens and herbs.

"Here we actually grow it, clip it and serve it."

Chef Chaz is showing off the new "urban cultivator" at the District American Kitchen and Wine Bar. The self-contained unit looks a lot like a fridge.

The device allows the restaurant at the downtown Phoenix Sheraton to grow herbs and micro-greens right in the kitchen.

"This is the germination process we start from seed, we allow it to grow. This is the cilantro and spearmint that's ready to take off and then it starts to get into the finished product," says Chaz Frankenfield, Executive Sous Chef.

The benefits? Chef Chaz says more nutritional value and flavor. And it's much better for the environment.

"So we're not putting a major carbon footprint on the earth by transporting produce across the nation, we're actually growing it here in the kitchen, flipping it, serving it 50 feet from the guests. Cannot get any fresher."

And that's not all.

"I'm in the process now of growing beets, artichokes, Brussels sprouts so I'm starting it in the urban cultivator and then we're going to transplant them into the rooftop garden."

By growing right on property, Chef Chaz says the hotel is conserving time, water and energy and minimizing waste and emissions.
