Monday's meal: Seared Scallops with Mango Salsa

Ben Taylor, from Central Market, joined us in the studio for today's edition of 'Monday's Meal' to show us a simple, tasty method for preparing scallops.

Recipe: Seared Scallops with Mango Salsa

Mango salsa ingredients

  • 2 Atualfo mangos
  • 2 Fresno chiles, seeded
  • Handful mint and cilantro
  • 3 Tbsp. Belberry Calamansi Vinegar
  • 2 Tbsp. olive oil
  • Salt and pepper, to taste

For scallops

  • 8 U-10 scallops
  • 1 Tbsp. canola or grapeseed oil
  • Pinch coarse salt and pepper
  • Salad greens, your favorite variety

To make the salsa

  1. Peel and seed mangoes, and dice the "meat" of the fruit; add to a small bowl.
  2. Finely chop the chiles, mint and cilantro and add to bowl with mango.
  3. Drizzle with vinegar and oil, season with salt and pepper and toss well; set aside.

To prepare the scallops

  1. Heat cast-iron skillet over medium-high to high heat, you want the skillet to get slightly smoky.  
  2. While skillet is heating up, pat scallop dry with a paper towel to absorb any residual moisture.
  3. Brush scallop with oil and sprinkle top and bottom with a pinch of salt and pepper.
  4. Place scallop in hot skillet and sear 1 minute on each side.
  5. Remove from pan and immediately serve atop dressed greens with mango salsa.
