Monday's Meal: Gluten-free Ginger Chicken Stir Fry

Chef Matt Reinhart, from Snap Kitchen, stopped by the Good Day kitchen to show us how to make a gluten-free chicken stir fry dish.

Recipe: Gluten-free Ginger Chicken Stir Fry

Ingredients

  • 1/8 cup grapeseed oil
  • ½ red onion, julienned
  • 1 red bell pepper julienned
  • 4 baby bok choy, sliced
  • 1-2 carrots, shredded
  • 1 clove garlic, minced
  • 1 oz fresh ginger, minced
  • 2 cups quoinoa, cooked & cooled
  • 1/3 cup gluten free soy sauce
  • 1 ½ tbsp sesame oil
  • ¼ cup unseasoned rice wine vinegar
  • ¾ tsp dried ginger
  • ¼ cup edamame
  • 1/8 cup lime juice
  • 1 lb ground chicken, cooked
  • Pickled ginger for garnish

Directions

  1. Heat grapeseed oil in large pan over high heat.
  2. Add vegetables (except edamame), garlic and ginger and cook briefly. 
  3. Add cooked quinoa and stir. 
  4. Mix soy sauce, sesame oil, rice wine vinegar, dried ginger and lime juice in a bowl. 
  5. Add soy sauce mixture to quinoa and vegetables, stir. 
  6. Add edamame and cooked ground chicken until heated through. 
  7. Serve warm and garnish with pickled ginger.
