The Mediterranean Diet with its high content of olive oil and fish is always on the menu at Agnanti restaurant in Astoria, Queens.
Faye Lambrianidis, co-owner of Agnanti, prepared fish meze in the Good Day Cafe.
Fish Meze Recipe:
Ingredients:
2-3 ounces salmon
1 fresh scallion
1 grape leaf
1 lemon
drizzle of extra virgin olive oil
Instructions:
Step 1 Slice the fillet salmon into thin pieces. Add a touch of salt and pepper to the salmon.
Step 2 Take some fresh scallion add some salt pepper and olive oil and place it on the grill until it starts getting some color
Step 3 Open up and lay flat the grape leaf, center the salmon and add the scallion
Step 4 Roll the grape leaf like a dumpling
Step 5 Place it on the grill
Step 6 Plate it
