Farmer's market: January 2

Susan Leibrock, from the Sustainable Food Center, joined us in the Good Day kitchen with a healthy recipe that is sure to help people stick to their New Year's resolution of getting in shape.

Recipe: Crunchy Cabbage Salad


  • 1 head cabbage, chopped
  • 1 bunch green onions, thinly sliced
  • 2 packages Ramen noodles
  • ½ cup sunflower seeds
  • ½ cup sesame seeds
  • ½ cup chopped almonds

Dressing Ingredients

  • 3 tablespoons rice wine vinegar (or any white vinegar will do)
  • 2-3 tablespoons cup sugar (depending on how sweet you want it)
  • 1 tablespoons soy sauce
  • 1/4 cup canola oil


  1. Preheat the oven to 325° (or use a skillet on the stovetop).
  2. Discard the seasoning packets from the Ramen noodles and break up the raw noodles into small pieces.
  3. Mix together the noodles, sunflower seeds, sesame seeds and almonds.
  4. Spread the mixture out on a baking sheet and bake (or toast the mixture in a dry skillet) for 10 minutes or until lightly browned and crunchy.
  5. Remove from oven and let cool.
  6. In a small saucepan, combine the dressing ingredients.
  7. Bring the dressing to a boil and then let simmer for one minute, stirring constantly.
  8. Let the dressing cool.
  9. Toss all ingredients together with the dressing.
  10. Serve and enjoy.
