Lobster Mac & Cheese

Holiday foods can be decadent but come just once a year, so they can fit into an overall plan.  If you indulge in a treat like this one, balance it out with other meals and get in some activity - and enjoy every delicious bite.  Get back on track the next day.

Amount: 8 servings

  

Ingredients:

8 ounces Essential Everyday™ Penne Rigate Pasta

½ cup Essential Everyday Butter, divided

1 tablespoon chopped garlic

6 tablespoons Essential Everyday All-Purpose Flour

3 cups whole milk, warmed

1½ cups Essential Everyday Shredded Mild Cheddar Cheese

1½ cups Essential Everyday Shredded Mozzarella Cheese

1¼ cups Essential Everyday Fancy Shredded Parmesan Cheese, divided

¼ teaspoon cayenne pepper, optional

8 ounces cooked lobster meat, torn into chunks

4 slices Essential Everyday Thick Cut Bacon, cooked and crumbled

1 medium tomato, seeded and chopped

1½ cups Japanese-style Panko bread crumbs

 

Directions:

  1. Prepare pasta according to package directions; drain. Meanwhile, in medium saucepan, melt 6 tablespoons butter over medium heat.  Sauté garlic in butter 1 minute.
  2. Whisk in flour; cook 1 minute, whisking constantly.  Gradually add in warmed milk, whisking constantly until smooth.  Cook over medium heat, whisking constantly, until thickened and mixture comes to a boil.
  3. Blend in cheeses (reserving ¼ cup shredded Parmesan) and cayenne pepper; salt and pepper to taste.  Reduce heat to low and continue stirring until cheese is melted.
  4. Toss pasta with sauce; gently stir in lobster, bacon and tomatoes. Transfer to a greased baking dish. Melt remaining 2 tablespoons butter.  Toss with bread crumbs and remaining Parmesan cheese; sprinkle over pasta.
  5. Bake in a preheated 375°F oven 20-25 minutes or until golden brown on top and bubbly.

Note:  Can be baked in individual ramekins; reduce bake time by 5-10 minutes.
