Monday's meal: Curry Tofu Wrap

Rich Popovic and Zoelle Appell, from Austin Java, joined us in the Good Day kitchen to show us how to prepare a tasty vegetarian version of a curry wrap.

Recipe: Curry Tofu Wrap


  • 1 12" Tortilla
  • 1# tofu firm.
  • 1Tbl Olive Oil
  • 1tsp ginger
  • 1tsp garlic fresh chopped
  • 2oz raisins
  • 2oz craisins
  • 3 Tbl chopped celery
  • 2oz chopped pecan
  • 3/4 Tbl curry powder
  • 1/2 tsp tumeric
  • 2 tsp salt
  • 3 cups fresh spinach
  • 1/2 cup vegan mayo
  • 2 oz fresh spinach
  • 1/4 cup shredded carrots


  1. Cut tofu into cubes, simmer in salted water for 5 min. Drain and cool and set aside.
  2. In a non-stick sauté pan add oil, ginger, garlic, raisin, craisins. Cook over medium heat for a few minutes to combine flavors.
  3. Add curry powder, tumeric, spinach and cook until spinach is wilted and all moisture is cooked off. Remove from heat.
  4. Add chilled tofu, celery mayo pecans and mixture from pan.
  5. Place on bread, wrap or serve as dip.
