Chef Ben Hightower, from Trace, joined us in the Good Day kitchen to cook up a fall dish, and talk about his participation in the Austin Film Festival's 'Film & Food' party.
Taylor Cumbie, Director of Marketing for the Austin Film Festival, also stopped by the studio to talk about the event.
Recipe: Fall squash salad
Ingredients
- Roasted Winter Squash
- Harissa Vinaigrette
- Plumped Raisins-In Apple Cider
- Pure Luck Feta
- Baby Arugula
- Oregano Leaves
- Rye Berries-Boiled in Water
Recipe: Harissa Vinaigrette
- 2 Tbsp Shallots-Minced
- 4 Tbsp Harissa
- 1/2 tsP Dijon Mustard
- 1/4 tsp Salt
- 1/4 CupRed Wine Vinegar
- 1/4 Cup Sherry Vinegar
Directions (for vinaigrette)
- Combine
everything except oil in blender and blend well.
- Stream
in EVOO.
