Mo Wark and Kevin Whitton, with Uncle Billy's restaurant, stopped by Good Day with a couple of recipes to spice up your 4th of July menu.
Recipe: Potato Salad
Ingredients
- 5 lbs Red Potatoes
- 1 cup Scallions (chopped)
- 1 cup Celery (chopped)
- 3/4 cup Red Onion (small slices)
- 1/4 cup Parsley (chopped)
- 1.5 Tbs Black Pepper
- 3 cups Potato Salad Dressing

Ingredients
- 2 cups Mayonnaise
- 1.5 cups Buttermilk
- 1/4 cup Dijon
Mustard
- 1 Tbs Pork Rub
- 2 Tsp Salt
- 2 Tsp Black Pepper
Directions
- Place 5 pounds of
red potatoes into a large pot. Add enough water to submerge the potatoes, and
bring the water to a boil and boil for twenty minutes.
- While the potatoes
are boiling, chop celery, red onion, and parsley, and mix the potato salad
dressing.
- After 20 minutes,
test a potato by sticking a fork through it. If the fork goes-in easily the
potato is done. If not let the potatoes continue to boil until done.
- Once potatoes are
done, strain away the water and place the potatoes into a large mixing bowl. Mash
the potatoes to your desired consistency and mix-in vegetables.
- Add seasoning and
potato salad dressing and mix together.
- Place mixed potato
salad into a serving dish and refrigerate.
Recipe: Cole slaw
Ingredients
- 1 head Green
Cabbage
- 1/4 head Red
Cabbage
- 2/3 cup Shredded
Carrots
Recipe: Cole slaw dressing
- 2 cup Mayonnaise
- 3/4 cup Apple Cider
Vinegar
- 1 Tbs Sugar
- 1 Tbs Soy Sauce
- 1 Tbs Celery Seed
- 1 Tsp Salt
- 1 Tsp Black Pepper
Directions
- Slice red and green
cabbage, and shred carrots.
- Place vegetables
into a large mixing bowl and set aside.
- Mix together Cole
Slaw dressing and combine with vegetables.
- Mix together
dressing and vegetables until all vegetables are evenly coated in dressing.
- Place into a serving
dish and refrigerate.
