Fun, Healthy Foods for Kids: Chef Ronnie Rios Aleman

It's hard to get kids to eat healthy food sometimes, so Executive Sous Chef Ronnie Rios Aleman of the Fairmont Chicago (Millennium Park) joined Good Day Chicago to demonstrate how to make homemade healthy fruit jelly and a PB&J Jenga sandwich.

On Saturday, May 5 from 2:00 p.m. until 3:00 p.m., Fairmont Chicago, Millennium Park will offer a complimentary cooking class dedicated to healthy eating for little ones. The one hour course will cover PB&J Jenga (whole wheat bread, fresh fruit, celery), Grilled Cheese (wheat bread, tomato slices, fries or salad), and Chicken Teriyaki (chicken strips, steamed rice, steamed broccoli, fresh fruit).

Strawberry "Jam"


Yields 12 oz.

2 oz water

3 Tablespoons honey

1# strawberries

4 oz. blueberries

1/4 tsp lemon zest

· Bring water to boil and add honey

· Return to boil and add cleaned, quartered strawberries

· Again, return to boil and reduce to medium simmer

· Cook for about 15 to 20 minutes or until mixture begins to thicken

· Cool to room temp and add blueberries and lemon zest

· Chill in refrigerator and keep for 1 week.

Kids Veggie Roll

Makes 3 Rolls

1 Cucumber

1 Cup Wakame Seaweed, Rehydrated

1 TBSP Sesame Oil

1 TBSP Soy

1 Lemon, juiced

1 TBSP Mirin

1 TSP Sesame Seeds, toasted

1 TSP Rice Wine Vinegar

· Peel Cucumber

· Cut cucumber into 3'DS

· Using a very sharp slicer knife, peel a thin layer around, moving knife up and down

· In a separate bowl, mix wakame with remaining ingredients

· Using cucumbers as the "wrap," roll the sushi

Chicken Teriyaki with vegetables

Teriyaki Sauce:

1 cup gluten free soy

2 cups sake

1/2 cup veg stock

¾ cup sugar

5 1/3 tbsp ginger juice

Bring to a boil. Thicken slightly with a kuzu starch slurry.

Kalbi Marinade

1 white onion

1 asian pear

1 kiwi

1 cup peeled, sliced ginger

½ cup garlic

½ cup sesame oil

2 cups brown sugar

2 ¼ cups of soy

1 cup coca cola

Puree the above


2 cups of sliced scallion

2 tsp of ground black pepper

¼ cup toasted sesame seeds

Kids Chicken Teriyaki Bento:

1. Marinate Chicken Breasts in Kalbi marinade

2. Grill whole breast, and glaze with Teriyaki Sauce


3. Blanch Broccoli Florets

4. Add 3 quartered Orange slices

5. ½ garden greens from Hot Apps

6. Add fresh rice and top salad with Ranch Dressing
