Dutch Style Pancake with Fresh Berries

Winter entertaining usually involves house guests. Wow them with this easy but elegant idea for breakfast! You simply mix and bake, then top with fresh fruit. It’s also great with bananas and a drizzle of caramel, too. Don’t forget – breakfast for dinner is a treat any time of year, so if you have last minute surprise guests, keep this pancake mix on hand to whip up a simple meal that anyone will enjoy this holiday season.
 

Dutch Style Pancake with Fresh Berries

Prep Time: 15 minutes
Bake Time: 30 minutes
Amount: 4 servings

Ingredients:

1 cup Complete Buttermilk Pancake & Waffle Mix
1 cup Wild Harvest® milk
4 large Jewel® eggs, beaten
1/8 teaspoon ground nutmeg
- pinch Jewel® salt
2 tablespoons Wild Harvest® Butter
- Aerosol whipped cream
- Jewel® powdered sugar
- fresh berries, whipped cream

Directions:

1. Place a 10-inch cast iron skillet or pie plate in a 475°F oven. In large mixing bowl, combine pancake mix, milk, eggs, nutmeg and salt; mix until just combined.
2. Remove skillet from oven; reduce oven to 425°F. Add butter to skillet; swirl to coat skillet. Pour pancake batter into skillet.
3. Bake until puffed and lightly browned (12-15 minutes). Remove from oven; sprinkle with powdered sugar. Top with berries and whipped cream.
