Kona Grill's Strawberry Basil Lemonade Recipe

2 oz lemonade
1 ¼ oz simple syrup
1 ¼ oz fresh lemon juice
3-5 strawberry slices (1/4” thick)
5 medium size basil leaves
Sprite to fill

Pour simple syrup and lemonade into a tall glass.
Muddle the strawberry, lemon juice and basil leaves in a shaker.
Add ice to glass then pour contents of glass into shaker.
Cap and shake 10 times. Pour back into glass and fill with Sprite.
If desired, garnish with lemon wedge and strawberry.
Adult version: If you want to make this drink with alcohol, you can add 1 ¼ oz of your favorite rum or vodka.

2lbs of grass fed braising beef cut into chunks (Beef Chuck)
2 onions cut into quarters
4 carrots, sliced roughly
1 leek sliced into ½ pieces
4oz bacon lardons
5 red Lasoda potatoes (blanched in boiling water until fork tender- cool and cut into quarters)
2oz of butter
3 tablespoons oil
1 tablespoon garlic
1 tablespoon of tomato paste
bouquet garni
1 bottle of red wine
10 cups of beef stock
10oz of blue oyster mushrooms (Roasted with Olive Oil, Salt and Pepper to taste)

Heat butter and oil in a large heavy-bottomed pot.
Brown the meat in batches. All pieces should be golden.
Remove all meat and add carrots, onions, leeks, garlic, bacon and tomato paste.
Deglaze with 2 cups of red wine.
Reduce wine by ½ and add meat back to pan.
Add the bouquet garni and beef stock.
Season with salt and pepper.
Cover and gently simmer very low for 1 hour.

Top with mushrooms and potatoes


Makes 2 pies

1 lb. soft butter
7 ounces sugar
19 ounces all-purpose flour
4 ounces cornstarch
9 ounces toasted and chopped pecans

Cream together sugar and butter first
Slowly add the flour, cornstarch & nuts
Wrap tightly in plastic and refrigerate for at least one hour before rolling out into pie shell
May need to use a bit of flour to help when rolling out

Makes 1 pie

1 cup sugar
1/2 cup light corn syrup
1/4 cup melted butter
4 eggs
1 cup chopped Arizona pecans
2 Tbsp chopped figs

Combine all ingredients in a bowl and mix well
Pour into pie shell and cook at 400 for 10 minutes
Cook at 350 for 30-35 minutes or until the pie stops giggling

Yields 2 pints

16 oz cream cheese
1 cup sour cream
1 cup heavy cream
1 3/4 cups sugar
1 lemon zest & juice
1 orange zest & juice

Add all ingredients to food processor, pulse till smooth
Place into ice cream freezer and spin till frozen
