Recipe: Salmon Patties

Austin, TX - September is National Cholestoral Education Month, which means it's a good time to get your cholestoral checked and take steps to get it under control if necessary.

Cholesterol is a waxy, fat-like substance found in your body and many foods. Your body needs cholesterol to function normally and makes all that you need. If you have too much cholesterol, it can build up in your arteries.

After a while, these deposits narrow your arteries, putting you at risk for heart disease and stroke. Your doctor can perform a simple blood test to see if you have high cholesterol.

Recipe: Salmon Patties

Ingredients:

1 can (14 oz) Pink salmon

1 egg, beaten

1 Tbsp. mustard

1/2 cup onion, finely chopped

1/4 cup bell pepper, finely chopped

3/4 cup cracker crumbs or cornmeal

2 Tbsp. canola oil

1/2 tsp. salt

Instructions:

Preheat oven to 350, if baking. Put salmon in bowl. Pick out the bones or leave the bones in for more calcium (your preference). Add the egg, mustard, onion, bell pepper, salt and crackers (or cornmeal). Mix well. Shape salmon into patties (about 1/2 in. thick and 4 in. round).

Heat a little oil in a pan. Cook the salmon patties until each side is well browned. Or, bake at 350 for 20 minutes.
