Recipe: Gardein Chick'n With Marsala Sauce

Austin, TX - Chef Tal Ronnen stopped by Good Day and prepared Gardein Chick'n with Marsala and Mushroom Sauce.

The recipe makes four servings.

Ingredients:

4 gardein chicken scallopini

2/3 cup unbleached flour

salt and pepper to taste

2 to 3 Tbsp. canola oil

1 garlic clove, minced

1 1/2 finely minced shallots

2 Tbsp. olive oil

approx. 1/3 pounds mushrooms, sliced

3/4 cup marsala cooking wine

1/3 cup vegetable stock

2 Tbsp. Earth Balance

1 Tbsp. fresh lemon juice

2 Tbsp. finely chopped parsley

Method:

Combine the flour, salt and pepper and dredge the gardein, coating completely. Heat the canola oil in a large pan and brown the gardein on both sides. Remve from the pan and set aside.

Lower the heat and saute the minced garlic and shallots in the olive oil for 3 minutes, taking care not to burn the garlic. Add the mushrooms and saute for 5 minutes. Add the wine and reduce by half.

Add the vegetable stock and reduce by half.

Return the gardein to the pan and cook for 5 to 10 minutes.

Stir in the Earth Balance, lemon juice and parsley. Serve immediately.
